Week of Thanksgiving Day 4

In New York City this time of year the smell of candied roasted nuts fills the air on just about every corner. This is my own little recipe that brings a little NYC to the country. It's the perfect sweet treat take away for family and friends to enjoy after the festivites, or on the drive home.

Candied Harvest Nut Mix

Ingredients 
2 Egg whites 
1 TBS Vanilla 
1 TBS Water 
1 1/2 Cups of Granulated Sugar * Extra 1/2 cup sugar to sprinkle on before baking 
1/2 Cup of brown sugar 
1 TBS Pumpkin Pie Spice 
1/2 TBS fresh ground nutmeg 
1/2 TBS Cinnamon 
12 oz Whole Walnuts 
12 oz whole Almonds 
12 oz Whole Pecans 
24 oz peanuts

Preheat oven to 350 
On a baking sheet lay down parchment paper, and place the nuts down. Roast 15min or until golden and you will start to smell lovely aroma.

Take 2 eggs (room temp) add Vanilla and beat together in a mixer until frothy.

Fold Roasted Nuts into the mixer.

In a large Separate Bowl mix granulated sugar, brown sugar, pumpkin pie spice, nutmeg, and cinnamon. Add Nuts coated with egg solution to sugar and spice mixture and toss until all nuts are coated.

Place back on backing sheet and sprinkle last 1/2 cup of sugar on top then roast for 20 min longer.

Let cool off for a bit and break apart in individual pieces....
